Oh kale yeah.
Kale has become more popular over recent years, becoming known as a "super food". It has come a long way, from being a decor piece at the Applebee's salad bar to smoothie bars popping up with all recipes containing this green.
Most kale varieties are known for being more bitter. Our russian kale is an heirloom variety with wide leaves and the most tender and milder than other varieties. It has a frilly leaves and dark purple-red stems, making it even pretty enough to add rich color to fall gardens.
One delicious kale recipe is the crunch salad from chick fil a. This is one of my go to orders (add grilled chicken). It is super tasty and packs lots of nutrients with those greens. This dressing is quick to put together and adds some tangy sweetness.
Copycat Super Crunch Kale Salad
Dressing:
⅓ cup pure maple syrup
3 tablespoons apple cider vinegar
2 tablespoons distilled vinegar
1 tablespoon white wine vinegar
1 tablespoon freshly squeezed lemon juice
½ teaspoon sea salt
¼ teaspoon black pepper
½ cup extra virgin olive oil
1 tablespoon Dijon mustard
Mix dressing up. Add to fresh kale with chopped green cabbage, nuts, raisins, and Parmesan.
